Ceviche de Jiva Recipe

Ingredients:

1.5 pounds cherry tomatoes, chopped –

1 onion, chopped

6 Persian cucumbers, chopped

2 green jalapenos, chopped

1 handful of cilantro, chopped

2.5 pounds of jiva, chopped or shredded

6 medium limes, squeezed

Salt and pepper to taste

Dressing:

1 cup Valentina (mild) or Tapatio (spicy)

2 cups V8 juice

1.5 cups Clamato juice

Optional: Ketchup for bolder flavor

Topping:

– Avocado, sliced or diced

Serving:

Tostadas or tortilla chips

Instructions:

1. Prepare the Ingredients:

Chop the cherry tomatoes, onion, cucumbers, jalapenos, and cilantro. Place them in a large mixing bowl. – Add the chopped or shredded jiva to the bowl.

2. Mix in Lime Juice:

– Squeeze the juice of 6 medium limes over the mixture in the bowl. Mix well to ensure everything is coated with the lime juice.

3. Season:

– Add salt and pepper to taste. Mix again to combine.

4. Prepare the Dressing:

– In a separate bowl, combine 1 cup of Valentina (or Tapatio), 2 cups of V8 juice, and 1.5 cups of Clamato juice.

Optional: Add ketchup if you prefer a bolder flavor. Mix well.

5. Combine Dressing with Main Ingredients:

– Pour the dressing over the jiva and vegetables mixture. Mix thoroughly to ensure everything is evenly coated.

6. Chill:

– Cover the bowl and let the ceviche chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

7. Serve:

– When ready to serve, top the ceviche with sliced or diced avocado.

– Serve with tostadas or tortilla chips on the side.
