Spicy Beef and Potato Skillet

Ingredients:
Beef and Potato Mix:
– 1 lb ground beef
– 1 onion, chopped
– 4 cloves of garlic, chopped
– 1/2 tablespoon crushed red pepper (adjust to taste)
– 3 potatoes, chopped
– 1 (16 oz) can of corn, drained
– 1 teaspoon sea salt
– 1 teaspoon black pepper
– 1 bunch of cilantro, chopped
For the Sauce:
– 2 handfuls of cherry tomatoes (about 30)
– 4 teaspoons chicken bouillon
– 1/2 onion
– 2 cloves of garlic
– 1 Chile Serrano (optional, for some extra spice)

Instructions :
1. Prepare the Ingredients: Chop the onion, garlic, and potatoes. Drain the can of corn. Chop the cilantro.
2. Cook the Beef and Vegetables: In a large skillet over medium heat, brown the ground beef until it’s cooked through. Add the chopped onion and garlic to the skillet, and cook until they become fragrant and translucent. Stir in the chopped potatoes and cook for about 10 minutes, or until the potatoes start to soften. Add the crushed red pepper, corn, sea salt, and black pepper. Stir well to combine all the ingredients. Cover the skillet and let it simmer on low heat for an additional 15 minutes, or until the potatoes are fully cooked.
3. Prepare the Sauce: In a blender, combine the cherry tomatoes, chicken bouillon, 1/2 onion, 2 cloves of garlic, and the Chile Serrano (if using). – Blend until you have a smooth sauce.
4. Combine and Cook: Pour the sauce into the skillet with the beef and potato mixture. Stir well to coat all the ingredients with the sauce. – Simmer for another 10 minutes, allowing the flavors to meld together.
5. Finish and Serve: Just before serving, sprinkle the chopped cilantro on top of the skillet. Serve the Spicy Beef and Potato Skillet hot with your choice of burritos, tacos, or tortilla chips.
