Ingredients:
- 1/2 cup rice (preferably short-grain)
- 1 1/2 cups water
- 1 stick of cinnamon
- A pinch of salt
- 1 1/2 cups milk
- 1/2 cup evaporated milk
- 2 tablespoons sugar
- 2 tablespoons condensed milk (for added sweetness)
Instructions:
- Cook the Rice: In a medium saucepan, combine the 1/2 cup of rice, 1 1/2 cups of water, and the stick of cinnamon. Add a pinch of salt. Bring to a boil, then reduce the heat to low and cover the pot. Allow it to simmer until the rice is tender and the water is absorbed (about 15-20 minutes).
- Add Dairy: Once the rice is cooked, stir in the 1 1/2 cups of milk and 1/2 cup of evaporated milk.
- Sweetening: Add the 2 tablespoons of sugar and 2 tablespoons of condensed milk. Stir well to combine, allowing the mixture to gently simmer for another 5-10 minutes. Stir occasionally to prevent sticking.
- Serve: Once the pudding has thickened to your desired consistency, remove it from heat. You can serve it warm, or chill it in the refrigerator before serving.
- Garnish (optional): For extra flavor, consider garnishing with ground cinnamon or nutmeg before serving.
