Sopa de Fideo

Ingredients
3 cups cherry tomatoes
1 bag mini pasta (fideo)
1/2 onion, chopped
1 garlic clove, chopped
3 tablespoons chicken bouillon (adjust to taste)
4 cups water (plus more as needed)
Olive oil (for cooking)

Sopa de Fideo – Instructions
1. In a blender, combine the cherry tomatoes with a little water and blend until smooth. Set aside.
2. Heat a drizzle of olive oil in a large pot over medium heat. Add the mini pasta and cook, stirring frequently, until it turns lightly golden brown.
3. Add the chopped onion and garlic to the pot. Continue cooking until the onion becomes soft and fragrant.
4. Pour in the blended tomato mixture and stir well to combine.
5. Add the chicken bouillon, adjusting the amount to your taste.
6. Pour in 4 cups of water and bring the soup to a gentle boil.
7. Reduce heat and let simmer until the pasta is fully cooked. Stir occasionally.
8.If the soup thickens too much, add more water as needed, since the pasta will continue to absorb liquid.

Serve warm and add a squeeze of fresh lime juice on top if desired—it adds a bright, fresh flavor. your decision and enjoy!
