Simple Tomato and Cucumber Salad

Ingredients:

  • 2 lbs cherry tomatoes, sliced
  • 8 Persian cucumbers, sliced
  • 2 (6 oz) cans of black olives, sliced
  • 1 oz BelGioioso fresh mozzarella cheese snack pack
  • 1 tablespoon dried oregano
  • 2 tablespoon sea salt
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Ingredients:
    • Slice the cherry tomatoes in halves.
    • Slice the Persian cucumbers into thin rounds.
    • Open and drain the cans of black olives, then slice them.
    • Dice the mozzarella cheese into small cubes.
  2. Combine:
    • In a large bowl, combine the sliced cherry tomatoes, cucumbers, black olives, and mozzarella cheese.
    • Add the dried oregano, sea salt, and freshly ground black pepper to taste.
  3. Add Dressing:
    • Toss the salad with your favorite dressing. For this recipe, I used my homemade dressing, which is very simple and easy (Stay tuned for that recipe!). As for now you can use Balsamic Vinaigrette or Italian dressing. Both will be great.
  4. Serve:
    • Chill in the refrigerator for about 30 minutes before serving for the best flavor. Enjoy your fresh and tasty tomato and cucumber salad!
